I know there are tons of recipes out there for creating muffins from scratch but lets face it…. you don’t always have time to pull out a bunch of ingredients. Sometimes you just want to quickly mix something up. If this sounds like you then I have an awesome pumpkin cheesecake recipe for you!

This recipe was born out of the need to quickly put together something in order to take my daily doses of cannabis medicine. I use it to reduce the pain and stiffness that comes with arthritis as well as to reduce the pain of lymph edema. Until I discovered cannabis all the traditional medications and treatments didn’t do much to help. I still had lots of breakthrough pain. And stiffness. Lots of stiffness. Then I discovered that cannabis could help. There’s just one thing. I hate smoking the stuff. I found using a vape pen helped but the effects have never been as long lasting as consuming my medicine. As I take micro doses several times as day I’m always looking for new ways to incorporate cannabis into food and so this recipe was created when I didn’t have much time but needed to make something.

These delicious muffins don’t require much effort. Just as much effort as it takes to use a boxed mix. That’s the key to simplicity here. Sure you can make muffins from scratch but let’s face it. Not everyone wants to do that. This recipe requires two things:

You will also need the additional items that the boxed mix requires to make which is usually eggs, oil and water.

In order to create a cannabis infused muffin you will need to replace some of the oil with your infused butter, oil or coconut oil. If you haven’t made your infused butter/oil just yet then check out this post on decarbing your cannabis and then this one on making your own cannabis infused coconut butter (you can swap out the coconut for butter or even a liquid oil such as cannola).

Another thing to take into consideration is the dose of your cannabis butter.

Personally I create mine using a cup of butter, coconut butter or oil. I am looking to make a highly concentrated butter so I don’t have to use tons of the infused butter in my recipe.

Ever see recipes calling for 1/2 a cup or more of infused butter? I know I have. It makes no sense to me to create a diluted butter and then use a bunch of it in a recipe. By using less I am able to control the amount of flavor that the cannabis contributes to the recipe. I don’t want whatever I’ve made to smell or taste strongly of cannabis. I find that it interferes with the flavor of the food I’m going to eat. I personally don’t enjoy consuming food items that taste strongly of cannabis.

Not sure how much CBD or THC your cannabis infused butter/oil contains? Then check out this post to learn how to calculate the dosage. Of course this is not a precisely exact amount as it hasn’t been lab tested. But you will discover that the estimated calculated dose will come pretty close to what you were expecting when you eat it.

Another great reason for using smaller, more concentrated butter/oil amounts is it allows me to more evenly distribute the butter/oil in the food. I’ve found when there are large amounts of infused oil being added in that some pieces of food get more than the others. When I use a small amount of cannabis infused butter/oil and incorporate it into the remaining butter/oil in a recipe I get more consistent dosing.

Pumpkin Cheesecake Muffin Instructions

1. Preheat your oven to the temperature on your muffin mix package.

2. Line your muffin pans with paper cups or grease the pan as directed on your muffin mix package.

3. Start by determining how much cannabis infused butter/oil you will need for your recipe in order to get the dosage needed. For example, I generally use a dose of about 3mg per edible item. Based on the calculations I have done when creating my infused butter/oil I will need 1/2 teaspoon of infused butter/oil per item. For 12 muffins I will need to add 6 teaspoons of infused butter/oil to the recipe.

This particular boxed mix requires 1/3 cup of oil. Start by putting the needed measurement of infused butter/oil into your measuring cup and then top it off with additional butter/oil to reach 1/3 cup.

4. Prepare the muffin mix according to the directions on the box.

5. Scoop the muffin batter into the pan.

6. Top each cup of muffin batter with a heaping teaspoon of the ready made cheesecake mix. Put it right in the middle of the muffins. Do not mix it in. You can push it down a little if desired. Your topped muffins will look something like this:

7. Bake the muffins according to the package directions.

8. Insert a toothpick into the muffin portion when testing to see if they are done. If the toothpick comes out clean then your muffins are ready to come out of the oven.

The cheesecake filling will have firmed up a bit more and even taken on a slightly golden color. You don’t want to overcook the muffin in an attempt to get a super firm cheesecake filling. The ready made cheesecake filling will remain softer and creamy.

Allow your muffins to cool off before serving. Store in a well marked container so everyone knows that it contains your cannabis medicine and keep these away from children. These muffins should be stored in the refrigerator due to the cream cheese mix.

Ingredients

  • A box of your favorite pumpkin muffin mix - I used this Pillsbury Quick Bread mix as it can also be used to create muffins
  • A container of Philadelphia brand Ready To Eat Cheesecake Filling

Instructions
